Sausage and Gnocchi Soup

1 lb breakfast sausage

1 lb ground beef

1 yellow onion diced

1 10 oz bag baby spinach (substitute kale, if desired)

16 oz sliced mushrooms, chopped

32 oz box beef or chicken broth 

1 box gnocchi 

1 can drained and rinsed white/navy beans, optional

1 tbsp oil or butter

Salt, pepper to taste

1-2 tsp onion powder 

1-2 tsp garlic powder 

1-2 tsp crushed chili pepper flakes

1 c heavy cream

1/4-1/2 c Parmesan cheese, optional 

In a soup pot, add oil or butter and diced onion, cooking until the onions have softened and are translucent. Add the sausage and beef, breaking up the meat and cooking it completely. Drain the grease and add the mushrooms.  Cook until mushrooms are tender. Stir in the spinach, cooking and stirring until the spinach has wilted and reduced. 

In a small pot, cook the gnocchi according to the directions on the box. Add the cooked gnocchi (save some of the gnocchi cooking liquid in case extra liquid is needed in the soup), beans and broth to the pot and heat to a mild boil.  Stir in the cream, cheese and seasonings. If the soup needs more liquid, add some of gnocchi cooking liquid.
